For a smoky depth of flavor, consider using smoked sausage instead of regular andouille.
Adjust the amount of Creole seasoning and hot sauce to your preferred level of spice.
If you don't have fresh parsley and green onions, dried herbs can be substituted, but the fresh herbs really brighten the dish.
To make this vegetarian, omit the sausage and use vegetable broth. You may want to add a teaspoon of smoked paprika to enhance the smoky flavor.
