Add the raw Virginia peanuts in shells and stir to ensure they are thoroughly coated in the brine. Transfer the peanut mixture to a gallon-sized resealable plastic bag. Set aside to soak for a minimum of 8 hours, or ideally overnight, to allow the peanuts to fully absorb the salt and vinegar flavor. (Soaking time: 8-12 hours)

Carefully transfer the soaked peanuts and all of the liquid to a multi-functional pressure cooker, such as an Instant Pot. Ensure the lid is properly closed and securely locked. Select the high-pressure setting according to the manufacturer's instructions. Set the timer for 120 minutes (2 hours). Allow approximately 10 to 15 minutes for the pressure to build inside the Instant Pot. (Pressure build-up time: 10-15 minutes)

Once the 120-minute cooking time has elapsed, allow the pressure to release naturally according to the manufacturer's instructions for your Instant Pot model. This process typically takes around 20 minutes. Once the pressure is fully released, carefully unlock and remove the lid. (Natural pressure release time: ~20 minutes)

For a more intense vinegar flavor, use apple cider vinegar instead of white vinegar.
Adjust the amount of salt to your preference. Start with 1/3 cup and increase if needed after tasting.
Be sure to use raw, unroasted peanuts in their shells for this recipe.
The longer the peanuts soak, the more flavorful they will become.
Store leftover boiled peanuts in the refrigerator in their cooking liquid for up to 5 days.
