Make the Sauce: As the noodles cook, heat olive oil in a large saucepan over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Be careful not to burn the garlic. Stir in the chicken stock, dry white wine, and chopped fresh cilantro. Add the remaining 1 tablespoon of jerk paste, along with salt and pepper to taste. Squeeze the juice from half of the lime quarters into the pan. Bring the mixture to a boil, then reduce the heat to low and stir in the heavy whipping cream. Simmer, stirring continuously, until the sauce thickens slightly, about 5 minutes. Avoid letting the sauce boil after adding the cream.
