Follow The Directions

01

Step
10 mins

Render the Salt Pork: In a skillet over medium heat, fry the cubed salt pork with the coarsely chopped onion until the salt pork is golden brown and the onions are softened. This should take approximately 10 minutes. Drain off the excess fat, reserving the flavorful mixture of salt pork and onion.

02

Step
5 mins

Prepare the Dumpling Dough: In a mixing bowl, combine the cold mashed potatoes, egg, salt, black pepper, and ground nutmeg. Stir in 1 cup of sifted all-purpose flour until well combined. On a lightly floured work surface (using 1 cup of the remaining flour), turn the dough out and gently knead until smooth and pliable.

03

Step
20 mins

Shape and Fill the Kroppkakor: Divide the dough into 12 equal portions. Roll each portion into a ball, using the remaining 1/2 cup of flour to prevent sticking. With your thumb, create an indentation in the center of each dumpling. Fill the indentation with a generous spoonful of the reserved salt pork and onion mixture. Carefully pinch the edges of the dumpling closed to seal in the filling, and gently roll in flour to coat.

04

Step
25 mins

Cook the Kroppkakor: Bring a large pot of water to a rolling boil. For enhanced flavor, substitute half of the water with beef broth. Gently drop the dumplings into the boiling water and broth mixture. Reduce the heat to low and simmer for approximately 25 minutes, or until the dumplings are cooked through and float to the surface.

05

Step
2 mins

Serve: Carefully remove the cooked Kroppkakor from the pot using a slotted spoon. Drain well and transfer to a serving bowl. Serve hot with a generous pat of butter.

For a richer flavor, consider using smoked salt pork.
Ensure the mashed potatoes are cold before mixing the dough to prevent it from becoming too sticky.
Be gentle when handling the dumplings to prevent them from breaking apart.
Kroppkakor are delicious served with lingonberry jam or a dollop of sour cream.
