Sauté the potatoes: Add potatoes to the same skillet, stirring to coat them in the bacon drippings. Cook over medium-high heat for about 4 minutes, stirring occasionally. Remove from heat, cover with a lid, and allow to cool slightly.

Combine the filling: In a bowl, combine the cooked bacon and green onions with the cooled potatoes. Add the shredded Cheddar cheese and sour cream. Season generously with black pepper.

Prepare the oven: Preheat your oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper for easy cleanup.

Assemble the hand pies: Unroll the pie crusts onto a lightly floured work surface. Using a 3-inch biscuit cutter or glass, cut out 24 circles. Place a spoonful of the potato filling in the center of 12 of the circles, leaving a small border around the edge. Top with the remaining dough circles, gently pressing down.

Seal and crimp: Pick up one hand pie at a time, pinching the edges firmly together to seal. Return it to the work surface and crimp the edges with a fork for a decorative touch and extra secure seal. Place the finished pie on the prepared baking sheet. Repeat with the remaining pies.

Egg wash: Brush the tops of the hand pies with the beaten egg using a pastry brush. This will give them a beautiful golden-brown sheen.

For extra flavor, consider adding a pinch of garlic powder or onion powder to the potato mixture.
If you don't have Yukon Gold potatoes, russet potatoes will also work, but Yukon Golds provide a creamier texture.
Feel free to customize the filling! Add other cheeses, herbs, or spices to your liking.
These hand pies are best served warm, but they can also be enjoyed at room temperature. Store leftovers in an airtight container in the refrigerator.
