In a large Dutch oven or heavy-bottomed pot, brown the beef over medium-high heat, stirring occasionally, until all sides are seared (approximately 5 minutes). Drain any excess grease.

In a separate bowl, dissolve the beef bouillon cube in the hot chicken broth. Pour the broth mixture over the browned beef.

Add the chopped onions, Greek seasoning, black pepper, and bay leaves to the pot. Stir well to combine. Bring to a simmer, then reduce heat to low, cover, and let simmer gently until the beef is very tender (approximately 1 hour 15 minutes).

Add the shredded cabbage and sliced celery to the stew. Cover and continue to simmer until the celery is tender (approximately 30 minutes).

Stir in the coarsely chopped plum tomatoes, tomato sauce, and salt to taste. Simmer uncovered, stirring occasionally, until the stew has slightly thickened (approximately 15-20 minutes).

Before serving, remove and discard the bay leaves.

For a richer flavor, sear the beef in batches to avoid overcrowding the pot.
Adjust the amount of salt to your preference, keeping in mind that the bouillon cube already contains sodium.
If you like a thicker stew, you can add a small amount of tomato paste during the last 15 minutes of cooking.
Garnish with a dollop of sour cream or Greek yogurt for added creaminess.
