Preheat oven to 375°F (190°C). Arrange bacon on a broiler pan and bake until crisp (about 15 minutes). Reduce oven temperature to 200°F (93°C) to keep waffles warm. (15 minutes)

Preheat a waffle iron to high.

In a large bowl, whisk together whole wheat flour, all-purpose flour, baking powder, salt, and pepper. (2 minutes)

In a medium bowl, whisk together milk, melted butter, and egg. Add the milk mixture to the flour mixture and stir until just combined. Stir in the grated cheddar cheese and fresh herbs. (3 minutes)

Brush the preheated waffle iron with melted butter. Spoon in about 1/2 of the batter. Close and cook until the waffle is golden brown and crisp. Transfer the waffle to a plate and keep warm in the oven. Repeat with the remaining batter. Quarter the two waffles, creating 8 smaller waffles. (10 minutes)

In a small bowl, whisk together Dijon mustard and maple syrup. (1 minute)

To assemble the sandwiches: Top a waffle with bacon, lettuce, and tomato slices. Drizzle with maple-mustard sauce. Add another waffle to top. Serve immediately. (5 minutes)

For extra crispy bacon, place the broiler pan on a higher rack in the oven.
Feel free to experiment with different types of cheese in the waffles, such as Gruyere or Monterey Jack.
If you don't have fresh herbs on hand, dried herbs can be substituted. Use about 1 teaspoon of dried herbs for every 1 tablespoon of fresh herbs.
Waffles can be made ahead and frozen. Reheat in a toaster oven or oven until warm and crisp.
Adjust the amount of maple syrup in the mustard sauce to your preference.
