In a large bowl, whisk together 1 cup sugar, flour, and salt. Gradually whisk in milk, egg yolks, and whole eggs until the mixture is smooth and well combined. (5 minutes)

Melt butter in a large saucepan over medium heat. Pour the milk mixture into the saucepan with the melted butter. Reduce heat to medium-low and whisk constantly until the custard has thickened, coats the back of a spoon nicely, and begins to gently bubble. (Approximately 20 minutes). Remove from heat and stir in 2 teaspoons vanilla extract. Cover and allow the custard to cool to room temperature. (Approximately 1 hour).

Peel and slice bananas. Line the bottom and sides of 2 (9x13-inch) broiler-safe casserole dishes with vanilla wafers. Layer banana slices over the wafers. Pour the cooled custard evenly over the bananas and wafers, smoothing the top with a knife or spatula. (15 minutes)

For the meringue, in a large clean bowl, using an electric mixer or a stand mixer fitted with the whisk attachment, beat egg whites, cream of tartar, the remaining 1 tablespoon of sugar, and 1 teaspoon of vanilla extract at high speed until stiff peaks form. (Approximately 5 minutes)

Spoon the meringue over the top of the custard, ensuring it completely covers the surface. (5 minutes)

Position an oven rack about 4 inches from the broiler; turn the broiler to high. Quickly broil the meringue until it is lightly browned and toasted. (Approximately 1 to 2 minutes, watching very carefully to prevent burning).

Remove the dishes from the oven and allow the meringue to cool slightly. (Approximately 15 minutes). Serve immediately or chill, covered, for up to 4 days.

For the most flavorful pudding, use very ripe bananas. Their sweetness will enhance the overall taste.
To prevent the meringue from weeping, ensure the custard is completely cooled before topping it with the meringue.
Keep a very close eye on the meringue while broiling as it can burn quickly. The goal is a beautiful golden brown color.
For a richer flavor, consider using brown butter in the custard. Brown the butter in the saucepan before adding the milk mixture.
