Follow The Directions

01

Step
5 mins

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan. (5 minutes)

02

Step
2 mins

In a mixing bowl, combine the flour, melted butter, and confectioners' sugar. Stir in the chopped macadamia nuts until evenly distributed. Press half of this mixture firmly and evenly into the bottom of the prepared baking pan, creating a 1/2-inch-thick crust. (10 minutes)

03

Step
1 mins

Bake the crust in the preheated oven until it's lightly golden brown, about 15 to 20 minutes. Keep a close eye on it to prevent burning! (20 minutes)

04

Step
18 mins

While the crust is baking, prepare the mango filling. In a medium saucepan, combine the chopped mangoes, granulated sugar, 1/3 cup water, and lemon juice. Cook over medium heat, stirring occasionally, until the mangoes have softened and the mixture has reduced by about one-third, approximately 7 to 10 minutes. (10 minutes)

05

Step
3 mins

In a small bowl, whisk together the cornstarch and 3 tablespoons of water until smooth, forming a slurry. Pour this slurry into the mango mixture in the saucepan. Continue to cook, stirring constantly, until the filling has thickened and is glossy, about 5 to 7 minutes. (7 minutes)

06

Step
8 mins

Remove the mango filling from the heat and let it cool slightly for a few minutes. Pour the warm mango filling evenly over the baked crust. Sprinkle the remaining flour-nut mixture evenly over the top of the mango filling. (5 minutes)

07

Step
1 mins

Return the pan to the oven and continue baking until the topping is lightly browned and the filling is bubbly, about 20 to 25 minutes. (25 minutes)

08

Step
6 mins

Remove the mango bars from the oven and let them cool completely in the pan until set, about 15 minutes. Once cooled, cut into bars and serve. (15 minutes)

For the best flavor, use ripe but firm mangoes. Overripe mangoes can make the filling too soft.
If you don't have macadamia nuts, you can substitute with other nuts like walnuts or pecans.
To prevent the crust from sticking, you can line the baking pan with parchment paper before pressing in the crust.
These bars are best stored in the refrigerator to maintain their texture and freshness.

The mango filling was a little too tart for my taste, so I added a bit more sugar. Otherwise, these bars were perfect!
