In a small bowl, whisk together maple syrup, Dijon mustard, fresh thyme, and cinnamon until well combined. (2 minutes)

Season salmon fillets with kosher salt and freshly ground black pepper. (2 minutes)

Heat canola oil in a large oven-proof sauté pan over medium heat. Once the oil is shimmering, carefully place the salmon fillets skin-side down (if using skin-on fillets) in the hot oil. (1 minute)

Cook salmon in the hot oil until the skin is crispy and golden brown, about 3 minutes. Flip the salmon fillets and brush the surface generously with the maple Dijon glaze. (4 minutes)

Continue cooking until the bottom is browned, about 3 minutes more. (3 minutes)

Transfer the sauté pan to the preheated oven and bake until the salmon flakes easily with a fork, approximately 5 to 10 minutes, depending on the thickness of the fillets. (8 minutes)

For extra flavor, marinate the salmon in the maple Dijon mixture for at least 30 minutes before cooking.
If you don't have an oven-proof sauté pan, you can transfer the salmon to a baking sheet lined with parchment paper after searing.
Garnish with fresh thyme sprigs and a squeeze of lemon for an elegant presentation.
Serve with roasted asparagus or a side of quinoa for a complete and healthy meal.
