Follow The Directions

01

Step
2 mins

Heat the oil in a cast iron skillet or large pan over medium heat. Add the chopped shallots and garlic. Sauté until fragrant and softened, about 1-2 minutes.

02

Step
2 mins

Add the smoked paprika, dried oregano, salt, and red pepper flakes. Stir constantly to toast the spices, releasing their aroma, about 1 minute. Stir in the tomato paste and sun-dried tomatoes. Add the chickpeas and stir well to ensure they are fully coated in the mixture.

03

Step
10 mins

Pour in the vegetable broth and lemon juice. Bring the mixture to a simmer, then cover the skillet and let it cook for 10 minutes, allowing the flavors to meld together. If the mixture appears too thick, add a splash more broth.

04

Step

Stir in the coconut milk and mix well. Remove from the heat. Serve immediately over rice, couscous, or your favorite grain.

For an extra layer of flavor, consider adding a pinch of sugar to balance the acidity of the tomatoes.
Garnish with fresh parsley or basil for a pop of color and freshness.
To make it spicier, add more red pepper flakes or a pinch of cayenne pepper.
If you don't have sun-dried tomatoes in oil, you can use regular sun-dried tomatoes. Rehydrate them in hot water for 10 minutes before chopping and adding them to the skillet.
