Boil Potatoes: Place the potatoes in a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until the potatoes are tender and easily pierced with a fork, about 20 minutes. Drain the potatoes and immediately cover them with cold water to stop the cooking process. Allow them to cool completely, changing the water as needed to keep it cold. Once cooled, peel and slice the potatoes thinly.

Assemble Casserole: Lightly grease a casserole dish with olive oil. Arrange a single layer of potato slices evenly across the bottom of the dish, overlapping slightly if necessary. Top with a layer of sardine fillets, distributing them evenly over the potatoes. Scatter the halved or quartered cherry tomatoes over the sardines. Sprinkle the chopped garlic and basil evenly over the tomatoes, followed by the bread crumbs.

Bake: Bake in the preheated oven until the casserole is heated through and the bread crumbs are golden brown, about 20 minutes.

For a richer flavor, use sardines packed in olive oil.
Feel free to add other Mediterranean vegetables, such as sliced bell peppers, zucchini, or olives.
A sprinkle of grated Parmesan cheese before baking adds a salty, savory touch.
