In a large saucepan, combine vegetable broth, chicken broth, and pineapple juice. Bring to a boil over high heat. (2 minutes)

Stir in brown rice, raisins, turmeric, and cumin. Return to a boil, then reduce heat to medium-low, cover, and simmer until rice is tender and liquid is absorbed. (10 minutes)

While the rice simmers, heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add onion, zucchini, mushrooms, red bell pepper, and yellow bell pepper. Cook and stir until vegetables are softened. (5 minutes)

In a separate bowl, whisk together honey, 1 tablespoon of vegetable oil, lemon juice, ginger, and black pepper.

Stir honey mixture, cooked vegetables, and pineapple into the cooked rice. Bring the mixture back to a gentle boil, then remove from heat and serve hot. (2 minutes)

For a vegetarian option, replace chicken broth with additional vegetable broth.
Add a sprinkle of chopped fresh parsley or cilantro for extra freshness before serving.
Feel free to substitute other vegetables based on your preference and availability. Bell peppers and eggplant work great in this recipe.
If you want some heat in the dish, add a pinch of red pepper flakes to the veggies while sauteing
