Preheat oven to 350°F (175°C). Grease and lightly flour a 9-inch pie pan. (5 minutes)

In a blender, combine the eggs, flour, milk, sugar, coconut, and vanilla extract. Blend on high speed until the coconut is finely chopped and the mixture is smooth. (3 minutes)

Pour the blended mixture into the prepared pie pan. Sprinkle evenly with ground cinnamon. (2 minutes)

Bake in the preheated oven until a knife inserted into the center comes out clean, approximately 45 minutes. The top should be lightly golden. (45 minutes)

Allow the pie to cool completely on a wire rack. Refrigerate for at least 2 hours before serving to allow it to fully set. (120 minutes)

For a richer flavor, use full-fat coconut milk in place of regular milk.
If you prefer a less sweet pie, reduce the sugar to 1/2 cup.
To prevent the crust from browning too quickly, cover the edges with foil during the last 15 minutes of baking.
A sprinkle of toasted coconut flakes after baking adds a delightful textural contrast.
