In a large, heavy-bottomed pot (at least 16 quarts), combine the cleaned tripe and chopped onions.

Bring to a boil over high heat, then reduce heat to low, cover, and simmer gently for about 2 hours, or until the tripe is very tender. (2 hours)

Add the drained and rinsed hominy, chili powder, salt, and pepper to the pot. Stir well to combine.

Cover and continue to simmer on low heat for another 45 minutes to 1 hour, allowing the flavors to meld together beautifully. (45 minutes - 1 hour)

Serve hot, garnished with fresh chopped onions, a squeeze of lime juice, and warm corn tortillas on the side, if desired.

Thoroughly cleaning the tripe is essential for the best flavor. Rinse it multiple times under cold water, scrubbing away any impurities.
Adjust the amount of chili powder to control the spiciness of the Menudo. Start with a small amount and add more to taste.
Menudo is traditionally served with a variety of garnishes, such as oregano, dried red pepper flakes, and lime wedges. Feel free to experiment and find your favorite combination.
