For a more intense chocolate flavor, use dark cocoa powder. Canela, or Mexican cinnamon, has a softer, more delicate flavor than regular cinnamon. If you can't find it, use regular cinnamon, but reduce the amount by about 1/4 teaspoon. The pequin chile pepper adds a subtle warmth. Adjust the amount to your preference, or omit it entirely if you prefer no heat. For best results, allow the brownies to cool completely before slicing. This will prevent them from being too gooey.
