Follow The Directions

01

Step
5 mins

In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat. Add the minced onion, diced celery, and garlic. Sauté until the onion is translucent and softened, about 5 minutes.

02

Step
3 mins

Stir in the flour and cook, stirring constantly, for 3 minutes to create a roux.

03

Step
10 mins

Gradually pour in the vegetable broth, whisking continuously to avoid lumps. Bring to a gentle boil, then reduce the heat to low and simmer for 10 minutes, stirring occasionally to prevent sticking.

04

Step
5 mins

Stir in the cooked wild rice, grated carrots, toasted sliced almonds, and red pepper flakes. Return to a simmer and cook until the carrots are tender, about 5 minutes.

05

Step

Gently stir in the half-and-half and heat through, being careful not to boil. Season to taste with sea salt and freshly cracked black pepper before serving.

For a richer flavor, consider using homemade vegetable broth or adding a splash of dry sherry during the final minutes of cooking.
Toasting the almonds enhances their flavor and adds a pleasant crunch.
If you prefer a thicker soup, you can blend a portion of the soup before adding the half-and-half.
Wild rice can be cooked in advance and stored in the refrigerator until ready to use.
