Bring the sauce to a gentle simmer over medium-low heat. Reduce the heat to low, cover the pot, and simmer for at least 1 hour, or up to 2 hours for a richer, more developed flavor. Stir occasionally to prevent sticking.

For a deeper flavor, consider adding a clove or two of minced garlic to the skillet along with the onions.
A pinch of red pepper flakes can add a touch of heat.
If you have the time, simmering the sauce for longer (up to 3 hours) will result in a more complex and flavorful sauce. Be sure to check the sauce occasionally and add a little water or broth if it becomes too thick.
This sauce freezes beautifully. Allow it to cool completely before transferring it to freezer-safe containers or bags. It will keep in the freezer for up to 3 months.
