01 Step

Recipe View In a large, heavy-bottomed saucepan, combine the sugar and water. Bring to a rolling boil over medium-high heat, stirring occasionally until the sugar dissolves. Boil for 10 minutes. (Time: 10 minutes)

02 Step

Recipe View Stir in the fresh lemon juice, mashed bananas, and whole cloves. Reduce heat to low and simmer gently, stirring frequently to prevent sticking, until the mixture thickens to your desired consistency. This will take approximately 45 minutes. (Time: 45 minutes)

03 Step

Recipe View Remove from heat and strain the jam through a fine-mesh sieve or cheesecloth to remove the cloves. (Time: 5 minutes)

04 Step

Recipe View Carefully ladle the hot jam into the sterilized jars, leaving 1/4-inch headspace. Wipe the jar rims clean, place the lids on top, and screw on the rings until finger-tight.

05 Step

Recipe View Allow the jars to cool completely at room temperature before refrigerating. The jam will thicken further as it cools.

For a warmer flavor profile, try adding a pinch of cinnamon, nutmeg, or a small piece of fresh ginger to the simmering jam.
Lemon or orange zest can also be added for a citrusy twist.
While freezing is an option, be aware that the jam may darken slightly upon thawing. To minimize this, use airtight containers and consume within a few months.

Freezing works fine, just be sure to use freezer-safe containers. I didn't notice much darkening.

This recipe is fantastic! The hint of clove is subtle but adds a wonderful depth of flavor.
