While the bars are cooling, prepare the topping. In a microwave-safe bowl, combine the chocolate chips, butterscotch chips, and 1/3 cup peanut butter. Microwave in 15-second intervals, stirring after each interval, until the mixture is smooth and completely melted, approximately 1 to 3 minutes. (5 minutes)

Spread the melted chocolate mixture evenly over the warm cookie bars. Let the bars cool completely before cutting into squares. This will take approximately 2 to 3 hours, or you can speed up the process by refrigerating them. (120 minutes)

For a richer flavor, use dark brown sugar instead of light brown sugar.
Add a sprinkle of sea salt on top of the melted chocolate layer to enhance the sweetness.
Feel free to substitute other types of chocolate chips or nuts based on your preference.
Store the cooled cookie bars in an airtight container at room temperature for up to 5 days.
