Follow The Directions

01

Step

In a large bowl, whisk together the flour, oats, brown sugar, baking powder, baking soda, salt, and cinnamon. (5 minutes)

02

Step

In a microwave-safe liquid measuring cup, melt the peanut butter and butter in the microwave for 30 seconds. Whisk in the buttermilk and egg until smooth. (2 minutes)

03

Step

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix. Fold in the chocolate chips. Let the batter rest for 5 minutes. (7 minutes)

04

Step

While the batter rests, prepare the peanut butter sauce. In the same microwave-safe measuring cup, melt the remaining peanut butter and butter in the microwave for 30 seconds. Whisk in the confectioners' sugar and salt until smooth. Add more confectioners' sugar to reach desired consistency. (3 minutes)

05

Step

Heat a large nonstick skillet or griddle over low heat and coat lightly with cooking spray. (2 minutes)

06

Step

Pour 1/3 cup of batter onto the hot skillet for each pancake, spreading gently with the back of a spoon to form a circle. Sprinkle with candy-coated chocolate pieces. (2 minutes)

07

Step

Cook the pancakes until bubbles form on the surface and the edges are set, about 2-3 minutes. Flip and cook for another 1-2 minutes, or until golden brown. (5 minutes)

08

Step

Transfer the pancakes to a plate and drizzle generously with the peanut butter sauce. Garnish with extra candy-coated chocolates, if desired. Serve immediately and enjoy! (2 minutes)

For extra fluffy pancakes, let the batter rest for up to 15 minutes before cooking.
Adjust the amount of cinnamon and confectioners' sugar to your personal preference.
Feel free to substitute other types of chocolate chips or candies to customize your monster cookie pancakes!
To keep pancakes warm while cooking the rest of the batch, place them in a preheated oven at 200°F (95°C).

I didn't have buttermilk, so I used regular milk with a tablespoon of lemon juice. Worked great!

A little too sweet for my taste, but my family enjoyed them. I'll reduce the sugar next time.

Next time, I'm going to try adding some chopped peanuts for extra crunch.
