Follow The Directions

01

Step
10 mins

Prepare the Bacon (10 minutes): In a skillet over medium heat, fry the bacon lardons until evenly brown and crisp. Remove with a slotted spoon, drain on paper towels, crumble, and set aside, reserving 1 tablespoon of bacon fat in the skillet.

02

Step
5 mins

Prepare Oven and Casserole Dish (5 minutes): Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 4-quart casserole dish.

03

Step
5 mins

Sauté Aromatics (5 minutes): Add the tamales, chicken, corn, tomatoes, raisins, and olives to the skillet with the reserved bacon fat. Season with chili powder and salt. Toss gently to combine.

04

Step
5 mins

Assemble Casserole (5 minutes): Transfer the mixture to the prepared casserole dish. Dot evenly with the butter pats. In a separate bowl, whisk together the chicken broth and Worcestershire sauce. Pour evenly over the casserole.

05

Step
45 mins

Bake (45 minutes): Bake in the preheated oven for 45 minutes, or until heated through and bubbling.

06

Step
15 mins

Add Cheese and Finish Baking (15 minutes): Top evenly with the shredded Cheddar cheese. Return to the oven and bake for an additional 15 minutes, or until the cheese is melted, bubbly, and lightly browned.

07

Step
10 mins

Rest and Serve (10 minutes): Let the casserole rest for 10 minutes before serving. Garnish with fresh cilantro or parsley, if desired.

For a spicier kick, add a pinch of cayenne pepper or a dash of your favorite hot sauce to the chicken broth mixture.
If using homemade tamales, adjust the quantity based on their size. You'll want approximately 1.5 to 2 pounds of tamales.
To plump the raisins, soak them in warm water for 15-20 minutes, then drain well before adding to the casserole.
Feel free to substitute other cheeses, such as Monterey Jack or a Mexican cheese blend, based on your preference.
This casserole can be assembled ahead of time and refrigerated for up to 24 hours before baking. Add about 10-15 minutes to the baking time if baking from cold.

The raisins were a nice touch. I wouldn't have thought to add them, but they really worked well.
