Step

In a large bowl, whisk together the Italian seasoning, paprika, salt, and black pepper. Pat the chicken dry with paper towels, then toss with the seasoning mixture. (5 minutes)

In a 12-inch skillet over medium heat, fry the bacon until crisp and nicely browned. (5 minutes) Pour off all but 2 tablespoons of the bacon fat. Chop the bacon and set aside.

Fry the chicken in the bacon fat in the hot skillet over medium heat until browned on all sides. (6 minutes, about 3 minutes per side) Remove the chicken to a plate and keep warm.

To the same skillet, add the minced garlic and red pepper flakes. Cook and stir until fragrant. (30 seconds) Stir in the tomatoes and cook for 3 minutes. Pour in the heavy cream and bring to a simmer. Stir in ½ cup of the shredded Parmesan cheese; cook until the cheese is melted and the sauce is smooth. (6 minutes)

Step

Add the spinach and cook, stirring, until the spinach wilts. (2 minutes) Return the chicken and any accumulated juices to the skillet. Stir in the chopped bacon and zucchini noodles. Cook, stirring occasionally, until the chicken is heated through. (4 minutes) Season with salt and pepper to taste. Sprinkle with the remaining Parmesan cheese to serve.

For an even richer flavor, consider using smoked paprika.
If you don't have zucchini noodles, feel free to substitute with your favorite pasta or spiralized vegetables.
A squeeze of fresh lemon juice at the end brightens up the dish.
Add a dollop of pesto for an extra layer of flavor
