For a smokier flavor, consider using fire-roasted diced tomatoes.
If you don't have fresh jalapenos, 1/2 teaspoon of dried red pepper flakes can be substituted.
To make this dish even heartier, add a diced avocado after cooking.
This quinoa is delicious served as a side dish, or as a filling for tacos or burritos.
