Follow The Directions

01

Step
5 mins

Preheat oven to 375°F (190°C). (5 minutes)

02

Step
12 mins

Heat olive oil in a large, heavy-bottomed, oven-safe skillet (cast iron works great) over medium-high heat. Sear chicken breasts on both sides until golden brown, about 5 minutes per side. Remove chicken from skillet and set aside. (12 minutes)

03

Step
7 mins

Add diced onion to the skillet and cook until softened and translucent, about 5 minutes. Add ground beef and cook, breaking it up with a spoon, until browned, about 7 minutes. Drain off any excess grease.

04

Step
4 mins

Stir in minced garlic and cook until fragrant, about 1-2 minutes. Season with cinnamon, allspice, salt, and cayenne pepper. Cook and stir for another 2 minutes, allowing the spices to bloom and release their aromas. (4 minutes)

05

Step
3 mins

Add rinsed rice to the skillet and stir to coat it evenly with the oil and spices. Arrange chicken breasts on top of the rice. Pour in chicken broth, ensuring the rice is submerged. (3 minutes)

06

Step
25 mins

Cover the skillet tightly with a lid or aluminum foil. Bake in the preheated oven until the rice is tender and has absorbed all the liquid, about 20 minutes. (25 minutes)

07

Step
7 mins

Remove from oven and let rest for 5 minutes before removing the lid. Fluff the rice gently with a fork and sprinkle with chopped fresh parsley before serving. (7 minutes)

For an even richer flavor, try browning the chicken in a mixture of olive oil and a tablespoon of butter.
Rinsing the rice before cooking helps to remove excess starch, resulting in fluffier rice.
If you don't have an oven-safe skillet, you can transfer the mixture to a baking dish after step 4.
Feel free to adjust the amount of cayenne pepper to suit your spice preference. A pinch of red pepper flakes can also be used.
Garnish with toasted pine nuts or slivered almonds for added texture and flavor.
This dish is even better the next day, as the flavors have time to meld together.

The rice was a little too mushy for my liking. Next time, I'll try using less broth.

I was a bit skeptical about the cinnamon and allspice, but it totally works! The flavors are amazing.

I added some chopped vegetables like bell peppers and zucchini for extra nutrients. It turned out great!
