Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x11-inch baking dish with cooking spray. (5 minutes)

Cut 3/4 of each bell pepper (green, red, and yellow) and the onion into thin slices. Dice the remaining 1/4 of each bell pepper and the onion. (15 minutes)

In a large bowl, combine the ground beef, diced bell peppers, diced onion, tomato sauce, crushed crackers, brown sugar, Worcestershire sauce, chicken stock, olive oil, beaten egg, Montreal steak seasoning, minced garlic, and ground black pepper. Mix until just combined – avoid overmixing. (10 minutes)

Spread half of the beef mixture evenly into the bottom of the prepared baking dish. Top with the sliced bell peppers and sliced onion, leaving a 1-inch border around the edges. Gently spread the remaining beef mixture over the top, carefully tucking in the sides to seal the vegetables within the center of the meatloaf. Pour ketchup evenly over the top of the meatloaf. (10 minutes)

Bake in the preheated oven until the meatloaf is no longer pink in the center and the juices run clear, about 1 hour. An instant-read thermometer inserted into the center should register at least 160 degrees F (70 degrees C). (60 minutes)

Let the meatloaf rest for 10 minutes before slicing and serving. This allows the juices to redistribute, resulting in a more tender and flavorful meatloaf. (10 minutes)

For a richer flavor, consider using a combination of ground beef and ground pork or veal.
Feel free to experiment with different vegetables! Mushrooms, zucchini, or spinach would also be delicious additions.
To prevent the meatloaf from drying out, place a pan of water on the bottom rack of the oven during baking.
If you prefer a sweeter glaze, mix a tablespoon of brown sugar with the ketchup before spreading it over the meatloaf.
Leftover meatloaf makes excellent sandwiches or can be crumbled into pasta sauce.
