Follow The Directions

01

Step
5 mins

Bloom the Gelatin: In a medium-sized bowl, gently sprinkle the unflavored gelatin over the cold water. Allow it to sit undisturbed for 5 minutes, so that the gelatin softens and blooms. (Time: 5 minutes)

02

Step
2 mins

Dissolve the Gelatin: Pour the boiling water over the bloomed gelatin. Stir continuously until the gelatin is completely dissolved and the mixture is clear. (Time: 2 minutes)

03

Step
5 mins

Infuse the Zest: In a separate small bowl, combine 3 tablespoons of the fresh orange juice with the grated orange and lemon zests. Let this mixture steep for 5 minutes to allow the citrus oils to infuse into the juice. (Time: 5 minutes)

04

Step
3 mins

Strain and Combine: Strain the zest-infused orange juice through a fine-mesh sieve, discarding the zest. Add the strained juice to the dissolved gelatin mixture. Then, incorporate the remaining fresh orange juice, granulated sugar, fresh lemon juice, and a pinch of sea salt. Stir well until all ingredients are fully combined and the sugar is dissolved. (Time: 3 minutes)

05

Step
4 hrs

Chill and Congeal: Rinse a 4-cup mold with cold water. Pour the cooled gelatin mixture into the prepared mold. Cover the mold tightly with plastic wrap and refrigerate until the gelatin is fully set and congealed. (Time: At least 4 hours, preferably overnight)

For a smoother texture, ensure the gelatin is completely dissolved before adding the other ingredients.
Adjust the amount of sugar to your preference based on the sweetness of your orange juice.
If you don't have a mold, you can use individual ramekins or glasses.
Garnish with fresh orange slices or a dollop of whipped cream before serving for an elegant presentation.
