Follow The Directions

01

Step

Preheat oven to 350°F (180°C). Line 18 muffin cups with paper liners. (5 minutes)

02

Step

Sift together flour, baking powder, and salt three times. Set aside. (10 minutes)

03

Step

In a clean, dry bowl, beat egg whites until foamy. Gradually add 1/2 cup of sugar and continue beating until soft peaks form. Set aside. (8 minutes)

04

Step

In a separate bowl, beat softened butter until fluffy, about 2-3 minutes. Gradually add the remaining 1 cup of sugar and cream together until light and fluffy, about 5 minutes. (8 minutes)

05

Step

Alternately add the sifted dry ingredients and milk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined after each addition. Stir in the vanilla extract. (10 minutes)

06

Step

Gently fold in the beaten egg whites until just combined, being careful not to deflate the mixture. (5 minutes)

07

Step

Divide the batter evenly into 6 separate bowls. Add a different food coloring to each bowl, stirring until the color is evenly distributed throughout the batter. Add more coloring, a drop at a time, until the desired vibrancy is achieved. (15 minutes)

08

Step

Using a tablespoon or small cookie scoop, carefully layer each color into the prepared muffin liners. Start with one color, gently spread it to the edges, and repeat with the remaining colors. (20 minutes)

09

Step

Bake in the preheated oven for about 20 minutes, or until a toothpick inserted into the center comes out clean. (20 minutes)

10

Step

Let the cupcakes cool slightly in the pan before transferring them to a wire rack to cool completely. (20 minutes)

For best results, ensure all ingredients are at room temperature before beginning.
Do not overmix the batter once the dry and wet ingredients are combined to prevent tough cupcakes.
To create a more distinct rainbow effect, avoid swirling the colors together excessively when layering.
These cupcakes can be stored in an airtight container at room temperature for up to 3 days.
