For best results, ensure your egg whites are at room temperature. This helps them whip up to a greater volume. Be patient during the beating process. The time it takes to reach the desired consistency may vary slightly depending on your mixer and the humidity. If you don't have a double boiler, a heatproof glass or stainless steel bowl set over a pot of simmering water works just as well. Just make sure the bottom of the bowl doesn't touch the water. Feel free to experiment with different fruit flavors to create your own signature frosting. Lemon, strawberry, and raspberry are all excellent choices.
