Follow The Directions

01

Step
2 mins

In a medium saucepan or Dutch oven, heat the vegetable oil over medium heat. (2 minutes)

02

Step
3 mins

Add the white onion, red onion, garlic, bell peppers, and crushed peanuts to the saucepan. Sauté for 2-3 minutes, or until the onions become translucent and fragrant.

03

Step
5 mins

Stir in the coarsely chopped tomatoes, water (or vegetable broth), onion salt, garlic salt, and cayenne pepper. Bring the mixture to a boil, then reduce the heat to low.

04

Step
1 hrs 30 mins

Cover the saucepan and simmer for at least 30 minutes, or preferably 1 1/2 hours, allowing the flavors to meld and deepen. Stir occasionally to prevent sticking.

For an even richer flavor, consider using roasted peanuts and homemade vegetable broth.
Adjust the amount of cayenne pepper to your desired level of spiciness.
This stew is even better the next day, as the flavors have more time to develop.
Serve with a dollop of plain yogurt or a sprinkle of fresh cilantro for added freshness.
