Follow The Directions

01

Step

Preheat oven to 200 degrees F (95 degrees C). Preheat a waffle iron according to manufacturer's instructions. (5 minutes)

02

Step

In a mixing bowl, whisk together the flour, brown sugar, baking powder, baking soda, and salt. Set aside. (2 minutes)

03

Step

In a separate large bowl, beat the buttermilk, ricotta cheese, and eggs with an electric mixer until smooth. Stir in the melted butter and maple extract. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing; a few lumps are perfectly fine. (5 minutes)

04

Step

Lightly coat the preheated waffle iron with cooking spray. Pour about 1 cup of batter onto the iron, spreading evenly. Sprinkle 2 to 3 tablespoons of chopped pecans over the batter. (2 minutes per waffle)

05

Step

Cook until the waffle is golden brown and the steaming subsides, indicating it's fully cooked (typically 3 to 5 minutes). Carefully remove the waffle and place it on a baking sheet. Cover loosely with aluminum foil and transfer to the preheated oven to keep warm. Repeat with the remaining batter. (3-5 minutes per waffle)

For an extra touch of luxury, consider browning the butter before adding it to the batter. This will impart a deeper, nuttier flavor to the waffles.
The key to light and fluffy waffles is to avoid overmixing the batter. A few lumps are perfectly acceptable and will result in a more tender waffle.
Feel free to experiment with different extracts. Vanilla or almond extract are excellent alternatives to maple.
Serve immediately with your favorite toppings such as fresh berries, whipped cream, and a drizzle of pure maple syrup.
