Store (5 minutes): Transfer the Pina Colada Fruit Jellies to an airtight container and store at room temperature. They will keep for several days.

For a more intense pineapple flavor, add a tablespoon of pineapple juice to the mixture.
If you don't have coconut extract, you can substitute it with a tablespoon of coconut cream or coconut milk, but reduce the applesauce by the same amount to maintain the proper consistency.
Ensure the mixture is cooled slightly before pouring into the chilled dish to prevent cracking.
For best results, use high-quality gelatin and fresh lime juice.
If you want to avoid refined sugar, try using coconut sugar for coating.
