Follow The Directions

01

Step

Prepare the Frying Oil: In a deep-fryer or large, heavy-bottomed saucepan, heat oil to 375 degrees F (190 degrees C). (5 minutes)

02

Step

Make the Fritter Batter: In a mixing bowl, whisk together the drained crushed pineapple, self-rising flour, milk, and egg until just combined. Be careful not to overmix; a few lumps are fine. (3 minutes)

03

Step

Prepare the Pineapple Glaze: In a small saucepan, bring the reserved pineapple juice to a boil. Add the granulated sugar and stir until dissolved. Reduce heat to low and simmer until the glaze thickens slightly, about 10 minutes. Remove from heat and let cool to room temperature. The glaze will thicken further as it cools. (25 minutes)

04

Step

Fry the Fritters: Carefully drop spoonfuls of the batter into the hot oil, working in batches of 2-3 to avoid overcrowding the pan. Fry for 3-4 minutes, or until golden brown and cooked through, turning once halfway through. (10 minutes)

05

Step

Drain and Glaze: Remove the fritters from the oil with a slotted spoon and transfer them to a plate lined with paper towels to drain excess oil. (2 minutes)

06

Step

Finish and Serve: Drizzle the cooled pineapple glaze generously over the fritters and dust with confectioners' sugar. Serve immediately for the best texture and flavor. (2 minutes)

For extra flavor, add a pinch of ground cinnamon or nutmeg to the fritter batter.
If you don't have self-rising flour, you can make your own by whisking together 1 cup all-purpose flour with 1 1/2 teaspoons baking powder and 1/4 teaspoon salt.
The glaze can be made ahead of time and stored in the refrigerator for up to 3 days. Reheat gently before using.
Ensure the oil temperature is consistent to avoid greasy or undercooked fritters.
