Follow The Directions

01

Step
5 mins

In a large salad bowl, gently combine the romaine lettuce, mandarin orange segments, green onions, and toasted almonds. (5 minutes)

02

Step
2 mins

In a blender, combine the sugar, apple cider vinegar, salt, and dry mustard. Blend on medium speed until the sugar is dissolved. (2 minutes)

03

Step
3 mins

With the blender running on low, slowly drizzle the vegetable oil into the mixture in a steady stream. Continue to blend until the dressing emulsifies and becomes smooth and creamy. (3 minutes)

04

Step
1 mins

Add the poppy seeds to the dressing and pulse briefly to incorporate them evenly. Avoid over-blending, as this can make the poppy seeds bitter. (1 minute)

05

Step
2 mins

Just before serving, drizzle the poppy seed dressing over the salad and toss gently to coat all the ingredients. Serve immediately to prevent the salad from becoming soggy. (2 minutes)

For a richer flavor, try using toasted sesame oil in place of some of the vegetable oil.
If you prefer a sweeter dressing, add an extra tablespoon or two of sugar to taste.
Toasting the almonds enhances their flavor and adds a pleasant crunch to the salad. Watch them carefully to prevent burning!
This salad is best served fresh. If making ahead of time, store the dressing separately and add it just before serving.
