In a large, heavy-bottomed pot or Dutch oven, combine the beef pot roast, diced onion, fresh mint leaves, minced garlic, ground cinnamon, ground allspice, and bay leaves. Season generously with salt and pepper.

Pour in enough water to completely cover the roast. Bring to a simmer over medium heat. (5 minutes)

Reduce heat to low, cover, and simmer gently until the roast is very tender and easily pulls apart with a fork, about 4 hours, adding more water if needed to keep the roast submerged.

Add the quartered cabbage to the pot, nestling it amongst the beef. (2 minutes)

Simmer until the cabbage is tender but still retains some bite, approximately 30 minutes.

For a richer flavor, consider browning the pot roast in olive oil before adding the other ingredients.
Adjust the amount of mint, garlic, and bay leaves to your personal preference.
Serve this hearty stew over slices of crusty French bread to soak up the delicious broth.
