Heat the vegetable oil in a large, heavy skillet over medium heat. Cook the shredded potatoes until golden brown on both sides (approximately 15-20 minutes).

In a small bowl, combine the melted processed cheese with the diced tomatoes and green chiles.

Stir in half of the peas and half of the corn into the potatoes, mashing slightly to incorporate. Add the remaining peas and corn, continuing to mash lightly. Stir in about 1 cup of the cheese and tomato mixture and mix well. Cook for 10 minutes, or until heated through.

Spoon the potato mixture into the tortillas and roll them up like burritos. Smother with the remaining cheese and tomato mixture.

Bake in a preheated oven at 350°F (175°C) for 15-20 minutes, or until heated through and cheese is melted and bubbly (optional).

For a spicier kick, add a pinch of cayenne pepper or a dash of your favorite hot sauce to the potato mixture.
Feel free to substitute the processed cheese with shredded cheddar, Monterey Jack, or any cheese that melts well.
Add some chopped onions or bell peppers to the potatoes for extra flavor and texture.
