Step

Preheat the oven to 475 degrees F (245 degrees C). Line a baking sheet with aluminum foil and brush with 1 tablespoon olive oil. (5 minutes)

Butterfly the shrimp: Carefully remove shells and legs from shrimp, leaving tails attached. Using a small, sharp knife, cut a slit lengthwise down the belly side of each shrimp, almost to the skin on the back. Open the shrimp like a book. Repeat with the remaining shrimp. (20-30 minutes)

Prepare the herb-garlic paste: Place the garlic, oregano, thyme, and a large pinch of kosher salt in a mortar. Pound and stir with a pestle for a few seconds. Add 1 tablespoon of parsley and continue to pound and stir until it forms a paste, about 1-2 minutes. Add 1/3 cup olive oil and stir until the oil is infused with the herbs and garlic, about 1 minute. (5 minutes)

Make the breadcrumb mixture: In a bowl, place the bread crumbs and stir in the herb-garlic infused oil. Add the cheese, remaining parsley, black pepper, 1 pinch of kosher salt, and 1 pinch of cayenne pepper. Mix with a fork until evenly combined. Pinch off a bit of the bread crumb mixture; if it feels dry and doesn't stick to your finger, drizzle in a bit more olive oil until the mixture reaches the desired consistency, about 2-3 minutes. (5 minutes)

Top the shrimp: Lightly but thoroughly top the cut-sides of the butterflied shrimp with the bread crumb mixture. Place them on the prepared baking sheet. (10 minutes)

Bake: Bake in the preheated oven until the shrimp are cooked through and the tails curl up, about 8-10 minutes. (8-10 minutes)

For an extra burst of flavor, try adding a squeeze of fresh lemon juice over the prawns immediately after baking.
Feel free to experiment with different herbs in the breadcrumb mixture, such as rosemary or marjoram.
These prawns are best served immediately. If you need to prepare them ahead, you can butterfly the shrimp and make the breadcrumb mixture in advance, storing them separately until ready to bake.
