Extract the Juice: Strain the blended pulp through a fine-mesh sieve, pressing gently to extract approximately 1 1/2 cups of juice. Discard the remaining pulp. (10 minutes)

Combine and Blend: In the same blender (rinsed), combine the extracted prickly pear juice, chilled water, freshly squeezed lime juice, stevia sweetener, and fresh mint leaves. Blend until completely smooth and the mint is finely incorporated. (3 minutes)

Serve and Garnish: Pour the Prickly Pear Limeade into two 16-ounce glasses filled with ice. Garnish with extra fresh mint leaves. Serve immediately and savor the refreshing taste. (2 minutes)

Prickly pear sweetness can vary. Adjust stevia to taste.
For extra flavor, muddle mint leaves gently before blending.
Use a neutral oil to rub into your hands before handling prickly pears to make removing the small spines easier.
Strain the lime juice to remove pulp for a smoother texture.
