(Cook time: 5-6 minutes). Remove the fries with a slotted spoon and drain on paper towels. Season immediately with salt.

Place a large skillet over medium heat. Arrange the thinly sliced capicola in four separate stacks in the skillet. Top each stack with one slice each of mozzarella, provolone, and Swiss cheese. Heat until the cheese is melted and bubbly, be careful not to burn the capicola. (Cook time: 3-5 minutes)

To assemble the sandwiches, lay 4 slices of Italian bread on a clean work surface or individual plates. Top each slice with a stack of the capicola and melted cheese, followed by approximately 1 1/2 cups of the chilled coleslaw, 1 slice of onion, and 1 slice of tomato. Divide the fried potatoes evenly among the sandwiches. Top with the remaining slices of bread. Cut each sandwich in half before serving to make it easier to handle.

For an extra layer of flavor, try adding a dash of hot sauce to the coleslaw dressing.
Feel free to experiment with different types of cheese or meat to customize your sandwich.
