Add flour, sugar, pumpkin puree, vegetable oil, eggs, baking soda, salt, cinnamon, cloves, nutmeg, and baking powder to the coffee mixture. Mix until just combined, being careful not to overmix. (5 minutes)

Fill each muffin cup about 2/3 full with batter. (5 minutes)

Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. (25 minutes)

For a richer coffee flavor, try using espresso powder instead of instant coffee granules.
Feel free to substitute other types of chocolate chips, such as dark chocolate or white chocolate, or even add chopped nuts for extra texture.
These muffins can be stored in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
For best results, measure flour using the spoon and level method to avoid dry muffins.
