Follow The Directions

01

Step

Preheat oven to 400 degrees F (200 degrees C). Prepare a 18-cup muffin tin with cooking spray or paper liners. (5 minutes)

02

Step

In a large bowl, whisk together the all-purpose flour, whole wheat flour, cinnamon, ginger, baking soda, nutmeg, allspice, and salt. Create a well in the center of the dry ingredients. (5 minutes)

03

Step

In a separate bowl, whisk together the brown sugar, pumpkin puree, soy milk, vegetable oil, molasses, eggs, and vanilla extract until thoroughly combined. (5 minutes)

04

Step

Pour the wet ingredients into the well of the dry ingredients. Gently stir until just combined, being careful not to overmix. Fold in the dark chocolate chips. (5 minutes)

05

Step

Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full. (5 minutes)

06

Step

Bake in the preheated oven for approximately 15 minutes, or until a toothpick inserted into the center of a muffin comes out clean. (15 minutes)

07

Step

Remove the muffins from the tin immediately and transfer them to a wire rack to cool completely. (5 minutes)

For a richer flavor, try using brown butter instead of vegetable oil.
Feel free to substitute other types of chocolate chips, such as semi-sweet or milk chocolate, based on your preference.
These muffins can be stored in an airtight container at room temperature for up to 3 days.
