Sprinkle the chopped fresh thyme evenly over the top of the egg mixture. Season generously with salt and freshly ground black pepper to taste. (1 minute)

Feel free to experiment with different cheeses such as Gruyere, Emmental, or even a sharp cheddar.

For a richer flavor, use heavy cream instead of milk.
If the crust starts to brown too quickly, cover the edges with foil.
