For a smoother sauce, use an immersion blender to puree after simmering.
If you don't have red wine, a splash of balsamic vinegar or a teaspoon of red wine vinegar will also work.
Taste and adjust seasonings as needed. A pinch of sugar can help balance the acidity of the tomatoes.
