For a richer flavor, consider using roasted garlic instead of fresh. A swirl of heavy cream or a dollop of pesto can add extra depth and richness to the soup. If you don't have butter beans on hand, cannellini beans or great northern beans make excellent substitutes. This soup is even better the next day! Store leftovers in an airtight container in the refrigerator for up to 3 days. For a vegan version, substitute vegetable broth for chicken broth and omit the Parmesan cheese.
