Preheat oven to 400 degrees F (200 degrees C). Lightly grease a rimmed baking sheet. (5 minutes)

Place bacon in a cold skillet. Cook over medium heat, rendering the fat until the bacon is crisp. Remove bacon with a slotted spoon and drain on paper towels; crumble. Reserve 1 tablespoon of bacon fat in the skillet. (10 minutes)

In a large bowl, toss Brussels sprouts with olive oil, reserved bacon fat, garlic, shallots, thyme, black pepper, and red pepper flakes (if using). Add the crumbled bacon and toss again to combine. Transfer to the prepared baking sheet. (5 minutes)

Slowly pour the chicken broth over the Brussels sprouts on the baking sheet. (1 minute)

Roast in the preheated oven for 10 minutes. Gently stir the sprouts. Continue roasting until sprouts are tender and caramelized, about 10-15 minutes more, depending on the size of the sprouts. (25 minutes)

Remove from oven and top with grated Parmesan cheese. Serve immediately, with additional Parmesan cheese on the side if desired.

For a vegetarian option, omit the bacon and increase the olive oil to 3 tablespoons. Consider adding a drizzle of balsamic glaze after roasting for a touch of sweetness and acidity.
If your Brussels sprouts are very large, you may need to roast them for a longer time. Check for tenderness with a fork.
Don't overcrowd the baking sheet, this helps the Brussels sprouts to roast instead of steaming. If needed, use two baking sheets.
