Once cooked, transfer the chorizo to a paper towel-lined plate using a slotted spoon. Reserve about 1 tablespoon of grease in the skillet, adding butter as needed to make up the difference. (5-6 minutes)

Fry the Eggs: Crack the eggs into the reserved grease-butter mixture in the skillet. Cook until the whites are set and the yolks reach your desired doneness. (3-5 minutes)

Assemble the Bowls: Divide the roasted sweet potatoes, drained black beans, cooked chorizo, and sliced avocados between 4 bowls. Top each bowl with a fried egg. Serve immediately.

For an extra layer of flavor, consider adding a sprinkle of cotija cheese, fresh cilantro, and a dash of your favorite chipotle hot sauce on top of each bowl.
Feel free to customize these bowls with other toppings like salsa, sour cream, or chopped onions.
If you don't have fresh chorizo, you can use pre-cooked chorizo or even substitute with another type of sausage.
