Follow The Directions

01

Step

In a large bowl, pour the chilled red wine. (2 minutes)

02

Step

Whisk in the raw sugar and sea salt until fully dissolved. (3 minutes)

03

Step

Sprinkle in the garlic powder, black pepper, paprika, fennel seed, oregano, anise seed, parsley flakes, red pepper flakes, cayenne pepper, minced onion, coriander seed, and mace. (5 minutes)

04

Step

Using your hands, thoroughly mix in the ground turkey and ground pork until the seasonings are evenly distributed throughout the meat. (10 minutes)

05

Step

Line 2-3 baking sheets with plastic wrap. (5 minutes)

06

Step

Roll the meat mixture into 1/4 cup balls. (10 minutes)

07

Step

Flatten each ball into 1/2-inch thick patties and place them in a single layer on the prepared baking sheets. (10 minutes)

08

Step

Cover the baking sheets with plastic wrap and freeze until the patties are solid. (at least 2 hours)

09

Step

Once frozen, transfer the patties to a resealable plastic bag and store them in the freezer for later use.

For an extra layer of flavor, toast the fennel and coriander seeds in a dry pan over medium heat for a minute or two before grinding.
If you prefer a spicier sausage, increase the amount of red pepper flakes or cayenne pepper to your liking.
These sausage patties can be grilled or pan-fried directly from frozen. Adjust cooking time accordingly.
To ensure even cooking, make sure the patties are uniformly shaped and thickness.
Feel free to experiment with other herbs and spices to create your own signature Italian sausage blend.
