Carefully roll each chicken breast up tightly, forming a neat roll. Secure each roll with 2-3 toothpicks to prevent unraveling during cooking.

Heat the skillet with the reserved pork fat over medium-high heat until shimmering. Sear the chicken rolls on one side for 3-4 minutes, or until golden brown and nicely caramelized. Turn the rolls over, reduce the heat to medium, and continue to sauté until the chicken is cooked through and the internal temperature reaches 165°F (74°C), approximately 5-7 minutes longer.

For a richer flavor, consider using ground pork shoulder, which has a higher fat content than lean ground pork.
Be careful not to overcook the chicken, as it can become dry. Use a meat thermometer to ensure accurate cooking.
