Follow The Directions

01

Step

Preheat oven to 325 degrees F (165 degrees C). Line baking sheets with parchment paper. (Prep time: 5 minutes)

02

Step

In a clean, grease-free glass or metal bowl, beat egg whites until foamy. Gradually add sugar, continuing to beat until stiff, glossy peaks form. (Time: 8-10 minutes)

03

Step

Gently fold in cocoa powder, vanilla extract, and salt until just combined. Be careful not to overmix. Fold in the shredded coconut until evenly distributed. (Time: 5 minutes)

04

Step

Drop rounded spoonfuls of the coconut mixture onto the prepared baking sheets, leaving a little space between each. (Time: 5 minutes)

05

Step

Bake in the preheated oven until the coconut macaroons are set and lightly golden brown around the edges, about 18-22 minutes. (Bake time: 18-22 minutes)

06

Step

Remove from oven and immediately gently press a maraschino cherry half into the top of each macaroon. Transfer the cookies to a wire rack to cool completely. (Time: 5 minutes)

For a deeper chocolate flavor, use Dutch-processed cocoa powder.
Ensure your egg whites are at room temperature for best volume when whipping.
Store the cooled Rudolph Noses in an airtight container at room temperature for up to 3 days.

I added a few drops of almond extract and they were amazing! A nice twist on the original recipe.

I used sweetened coconut by accident, and they were still delicious, just a bit sweeter. Next time I will try with unsweetened.
