While the salmon is baking, toss the diced avocado with lemon juice in a small bowl to prevent browning. In another small bowl, thin the sour cream with water until it reaches a drizzling consistency. (5 minutes)

Divide the tortilla chips between two serving plates. Spoon the onion-jalapeño mixture over the chips, along with any accumulated juices from the baking dish. Top with diced avocado, chopped cilantro, and minced green onion. Place a baked salmon fillet on top of each plate and drizzle generously with the thinned sour cream. Sprinkle with additional green onions and serve immediately with lime wedges. (5 minutes)

For a spicier kick, leave some of the jalapeño seeds in.
If you don't have chipotle pepper, a pinch of smoked paprika can be a good substitute.
Feel free to add other toppings like black beans, corn, or crumbled cotija cheese.
Make sure to use high-quality tortilla chips that can hold up to the toppings.
